Nama Chocolate means raw or fresh chocolate in Japanese. It is a Japanese-style ganache made with chocolate and fresh cream. Because it is made with fresh cream, the Nama Chocolate must be kept chilled in the fridge. This popular dessert in Japan is super rich, chewy with a silky smooth texture that literally melts in the mouth. The mixture is usually poured into a square pan, chilled in the fridge until hardened, and then sliced into mini squares with added sprinkles of fine cocoa powder or other toppings.

TRYING OUT NAMA CHOCOLATE

Of course, we just had to try this out with matcha. We tried it using white chocolate since it is has a mild flavor that will not overwhelm the matcha taste. We found these tips from  Just One Cookbook’s  incredibly helpful:

  • If you’re using white chocolates, get the ones that contain cocoa butter , and not vegetable fat.
  • Do not overheat the white chocolates because this will cause separation (oil coming out of the chocolate). Only simmer the white chocolates over gentle heat and stir frequently until evenly melt.
  • You have to quickly stir the white chocolate and butter while the heavy cream is still warm. Otherwise, it’ll start to solidify and it’ll be harder to mix.
  • You can store the Matcha Nama Chocolates for up to 4 days in the fridge, and up to 1 month in the freezer.

As the Matcha Nama Chocolate recipe uses very few ingredients with no baking needed, we recommend using a very good quality matcha that is both verdant green and has a strong matcha flavor. If the color of your matcha powder is not vivid enough, your Matcha Nama Chocolates will yield a dull green. You don’t necessarily need a ceremonial grade matcha for this recipe as that’ll quickly make this recipe expensive.
