WHAT EXACTLY IS "NAMA CHOCOLATE"?
Nama Chocolate means raw or fresh chocolate in Japanese. It is a Japanese-style ganache made with chocolate and fresh cream. Because it is made with fresh cream, the Nama Chocolate must be kept chilled in the fridge. This popular dessert in Japan is super rich, chewy with a silky smooth texture that literally melts in the mouth. The mixture is usually poured into a square pan, chilled in the fridge until hardened, and then sliced into mini squares with added sprinkles of fine cocoa powder or other toppings.

- Do not overheat the white chocolates because this will cause separation (oil coming out of the chocolate). Only simmer the white chocolates over gentle heat and stir frequently until evenly melt.
- You have to quickly stir the white chocolate and butter while the heavy cream is still warm. Otherwise, it’ll start to solidify and it’ll be harder to mix.
- You can store the Matcha Nama Chocolates for up to 4 days in the fridge, and up to 1 month in the freezer.

WHAT KIND OF MATCHA POWDER TO USE WHEN MAKING NAMA CHOCOLATE

If the color of your matcha powder is not vivid enough, your Matcha Nama Chocolates will yield a dull green. HOW TO MAKE EASY NAMA CHOCOLATE RECIPE
Ingredients
- 14 oz/400 g white chocolate
- 4 oz/125 ml heavy cream
- 8 oz/ 226 g unsalted butter
- 2 tbsp matcha powder
Directions
- First, prepare your baking tray with parchment paper.
- Slice the white chocolate bar and butter into small pieces so that it’ll melt quickly later.
- In a saucepan over medium heat, pour in the heavy cream. Once you start seeing bubbles forming, quickly remove the saucepan from the heat.
- Then, quickly add in the white chocolates and butter into the hot heavy cream and mix everything together evenly with a folding motion. Tips: Quickly stir the white chocolate and butter while the heavy cream is still warm. Otherwise, it’ll start to solidify and it’ll be harder to mix.
- Once you acquire a smooth mixture, add the matcha powder over a sift and mix it all together again until evenly smooth.
- Then, pour in the ganache mixture into the baking tray and let it sit in the fridge for about 4-5 hours.
- Warm up your sharp knife with some heat and divide the Matcha Nama chocolate into 4 blocks. Then, cut them further into 9 smaller pieces.
- Lastly, dust some matcha powder over the green tea chocolates to prevent it from sticking together.
