How to make delicious Matcha Financiers

A sweet, fragrant delight that’s incredibly moist with crisp golden edges. Taking a bite into these matcha financiers is an absolute treat when accompanied with a glass of hot tea in the afternoon.

We’ve been exploring different types of baked goods with our matcha lately, and we’re very happy to add this to our collection of  recipes  . This time, we wanted to try financiers, the classic French pastry, but with a matcha spin.

What is a financier cake?

A financier is a French almond cake flavored with browned butter and finely ground almonds. You can easily make them with few ingredients like almond flour, almonds, butter, egg whites and sugar. It is incredibly moist in the center with crisp golden edges usually shaped in a rectangular or “boat” mold with an interior texture comparable to a sponge cake.

Exploring financiers with matcha

We tried a few recipes, but we eventually settled on  Chubby Hubby’s  . It produced the best results and the only modification we made was to cut the amount of sugar used.

The recommended matcha blend to make matcha financiers

You will need a good culinary grade matcha for this matcha green tea financier recipe. A good culinary grade matcha will yield a beautiful green with actual matcha flavor that will shine through in your baking recipes.

For this matcha financier recipe, we recommend using our culinary grade matcha. Our Organic All Purpose Culinary Blend Matcha has a beautiful green, strongly flavored matcha that pairs well with the sweetness of browned butter and finely ground almonds.

How to make delicious matcha financiers


  • 5 oz/130 g unsalted butter
  • 2 oz/57 g fine almond flour
  • 2 oz/57 g all-purpose flour
  • 2.5 tsp matcha powder
  • 5 oz/130 g sugar
  • 4 egg whites


1. The first step is to make the browned butter.

Making the Browned Butter

Making the browned butter is not a complicated process at all. All you need to do is cook the unsalted butter in hot pan until it starts to bubble. You should start seeing white particles (these are milk solids). Once the milk solids turn a golden brown and emit a nutty hazelnut aroma, turn down the heat and strain.

2. Put the browned butter aside.

3. Mix and whisk the fine almond flour and sugar together, and gradually add in the egg whites and mix gently.

4. Sift all-purpose flour and matcha together into the mixing bowl. Add browned butter until it’s whisked evenly into a consistent, thick batter.

5. Transfer the batter into a piping bag and keep refrigerated for 24 hours (optional).

6. When you’re ready to bake, brush the inside of the molds with brown butter and dust some flour. Cool it in the freezer for about 5 minutes. We found boat shaped molds and decided to use that, but regular muffin molds work just as well.

7. Preheat your oven to 329F (165C) and pipe your batter into the molds.

8. Bake for 15 minutes and serve warm.

We shared a batch with friends and they loved it! It was a simple yet crowd-pleasing pastry and we can’t wait to try other flavors in the future.
